It was my parents anniversary and my mother asked me to prepare two beer chickens for the anniversary party. Just a small party for the family, and two beer chickens should do the job.
It is a very easy recipe to cook, and can be done indoors or outdoors. In the summer time when the weather is good, it is best done outdoors, as the heat from the grill can quickly warm up the house.
There are many stories about the origin of the beer chicken. One can easily imagine how this beer chicken recipe can just happen by accident. A beer drinker/ barbeque enthusiast was preparing his chicken barbeque and accidentally put his chicken on top of a half-drunk beer. He couldn’t find his beer can and opened another one. Later, when the barbeque was done, the cooked chicken was amazingly moist. The secret? His half-drunk beer underneath the chicken.
From then on, beer cans have been deliberately placed under the chickens to obtain a moist texture.

Bake or BBQ at 350 degrees F for 2-1/2 hours.
